Chef’s Notes

Hong Kong Typhoon Shelter Chili Crab Oil.
This is one of our customers’ favorites at our restaurant. It is great on mild cheese, chicken, pork, beef, bread and with noodle. To make this chili crab oil, we need to first depurate live crabs for 48 hours in our ozone depuration tank and then cook the crab at low temperature in oil to extract all of the flavor. Once we have crab oil, we add chili, garlic and fermented black beans to create this mouth-watering condiment. This dish was inspired by traditional Hong Kong Typhoon Shelter chili crab.

Crab Stock.
We use live crabs which have been depurated in our own ozone depuration tank for 48 hours to make our own crab stock. It takes 5 hours cooking at high temperature to make our crab stock.
