Chef’s Notes

Langoustine
It known variously as the Norway lobster, Dublin Bay prawn, scampi or cigala, is an orange-pink salt water crustaceans. While it looks like a small lobster, its meat is many times sweeter. It is one of chef’s favorite seafood ingredients in haute cuisine. Our langoustine is sashimi grade. It is my favorite “prawn” to eat.

Fresh pasta
We make our pasta every day at Table with no preservatives. We use two kinds of Italian flour and Japanese eggs in our own proprietary proportion to give it a more al dente bite than you usually get with fresh pasta.
